You can try Maldivian cuisine in any cafe. But you will have to hunt for the variety of European cuisine and visit a couple of resort restaurants; the cost of such a dinner is comparable to a meal in an elite Moscow restaurant. The kitchen of the island resorts is used for catering in hotels with three meals a day. In this case, local chefs face problems associated with the removal of food markets where they can buy meat and vegetables, but there is always an abundance of fish and seafood within walking distance.
In fact, Maldivian cuisine is very diverse and you should not judge it by the assortment of dishes that are offered in half-board hotels. This cuisine contains many delicious rice and curry dishes that you will not try at any resort in the country.
Try visiting one of the many cafes. Many cafes are completely unremarkable because their owners consider it unwise to spend money on unnecessary advertising, but you will be impressed by the variety of dishes and snacks that the restaurant will offer you.
You can order the dish you like, and they will bring it to you to try, but this service does not apply to all establishments.
